    Mash tofu with hands, getting all of the lumps out. Line a 12-inch colander with wet cheesecloth overlapping the sides. Add the mashed tofu to the colander, press down and cover with the overlapping sides. Place the whole thing in a large bowl. Cover the cheesecloth with a plate that fits inside the colander and place a 5 pound weight on the plate. Refrigerate and let sit at least 2 hours.While the tofu is chilling, sauté the onions, celery, and mushrooms in the sesame oil. When soft, add the garlic and all the rest of the stuffing ingredients, except herb stuffing, mixing well. Sauté for 5 minutes while stirring.Add herb stuffing and mix well. Remove tofu from refrigerator and take off weight, plate, and top of cheesecloth. Hollow out tofu to within 1-inch of the sides and bottom, placing the tofu you remove in a bowl. Place the stuffing inside the tofu shell and pack firmly. Cover with the remaining tofu and pat down firmly. Turn stuffed tofu onto a greased baking sheet, flat side down.Gently press on the sides of "turkey" to achieve a more oval, turkey-like shape. If desired, mold "drumsticks" out of one pound of tofu, and place on each side of the "turkey."Mix the basting mixture and then baste tofurkey with half of it. Cover tofurkey with foil, and bake at 400 degrees F for 50 to 60 minutes. Remove foil, baste with the remaining mixture, except for two tablespoons, and return to oven for 60 more minutes, or until the "turkey" is golden. Remove from oven and baste with remaining mix. Using two large spatulas to move to a large serving platter.

So you can see why I've started adding kale to my weekly grocery list.

Since I'm trying to include kale more in my meals, I've started to watch for more recipes that use it. This risotto recipe from Sunset Magazine is just one perfect example.

Grilled kale and pancetta risotto recipe

Serves 4

Ingredients:3 tablespoons olive oil, divided4 garlic cloves, mincedSalt and pepper to taste2 cups kale, stems removed4 ounces pancetta, diced2 cups Arborio rice1 shallot, chopped1 cup dry white wine, like chardonnay4 cups chicken broth2 tablespoons butter1 cup heirloom cherry tomatoes1/2 cup Parmesan cheeseDirections:
    Pour one tablespoon olive oil in a large bowl. Add the garlic and kale and toss to coat. Heat a grill pan over medium-high heat and cook kale for about four minutes. Transfer kale to a plate, slice up and set aside.Brown pancetta in a large sauté pan over medium-high heat. Transfer pancetta to paper towels and set aside.Add the remaining olive oil to the same pan you used for the pancetta. Add the rice, shallot and garlic and cook until rice starts to toast and shallots start to soften, about two minutes. Reduce heat to medium and pour in the wine, stirring constantly until absorbed. Add one cup of broth and continue stirring until absorbed. Continue adding the broth one cup at a time and stirring until absorbed and rice is tender, about 20 minutes.Remove risotto from heat and fold in pancetta, butter, tomatoes, kale and cheese. Spoon into a serving dish and serve immediately.

    Place all ingredients in a blender and blend until smooth.Grease a 9-inch baking dish and press mixture evenly into baking dish.Set aside for 1 hour and then cut into bars. Store in the refrigerator in an airtight container.

Ingredients:1-3/4 cups cooked winter squash puree (pumpkin or butternut, acorn or delicata squash)2 eggs1/4 cup coconut oil1 cup pure maple syrup2 teaspoons pure vanilla extract2 tablespoons chia seeds, ground1-1/2 cups white whole wheat flour1 teaspoon ground cinnamon1/2 teaspoon ground cloves1/2 teaspoon ground ginger1/4 teaspoon freshly ground nutmeg2 teaspoons baking soda1 teaspoon salt1/2 cup pepitasDirections:
    Preheat oven to 350 degrees F. and grease a 12-serving muffin pan.In the bowl of a stand-up mixer fitted with the paddle attachment, combine squash puree, eggs, coconut oil, syrup and vanilla. Blend on medium-high until smooth.In a medium bowl, whisk together chia, flour, spices, baking soda and salt. Add to wet ingredients and blend on low, scraping the bowl occasionally, until mixture is just moistened.Divide batter among muffin cups and sprinkle with pepitas. Bake for 25 minutes or until muffins spring back when touched and are lightly browned.Let muffins cool in pan for five minutes then invert onto a wire rack to continue cooling.

When storm hits, with widespread power outages, lots of families have to cope without electricity in the kitchen. This can make feeding your family a challenge to say the least. But it's not impossible.

Losing power in the kitchen can put you in a major pickle. But a little resourcefulness — plus a well-stocked pantry — will have your family fed in no time. As long as it's safe and there are no evacuation instructions (tune into a battery-operated radio for details), you'll be good to go.

Obviously no power means your fridge is shut off. If it seems like the power outage is a fluke and electricity should be restored soon, then resist the temptation to grab that cold beverage. Keeping the fridge closed will help prevent the cold air from rushing out and will make sure your food stays fresh, even for 24 hours. If there's a major outage in your area due to a storm or other major event, then you might want to crack open that ice cream and use up those perishables.

Gas or electric

You may even be able to cook, depending on your stove. If your kitchen is fully electric then you're out of luck, but if you have a gas oven and/or stove that can be used without electricity, then you're in business. Light some candles or set up some lanterns or flashlights and cook up a power outage feast for your family. Remember, you have to use up that food in your fridge anyway, so you might even be able to invite the neighbors over!

If your stove is out of the question, can you get a grill up and running? Of course if there's a hurricane then don't risk it, but if your power is out for another reason and you have access to a grill, then there's no better time for a cookout.
