When soft, add the garlic and all the rest of the stuffing ingredients, except herb stuffing, mixing well. Sauté for 5 minutes while stirring.Add herb stuffing and mix well. Remove tofu from refrigerator and take off weight, plate, and top of cheesecloth. Hollow out tofu to within 1-inch of the sides and bottom, placing the tofu you remove in a bowl. Place the stuffing inside the tofu shell and pack firmly. Cover with the remaining tofu and pat down firmly. Turn stuffed tofu onto a greased baking sheet, flat side down.Gently press on the sides of "turkey" to achieve a more oval, turkey-like shape. If desired, mold "drumsticks" out of one pound of tofu, and place on each side of the "turkey."Mix the basting mixture and then baste tofurkey with half of it. Cover tofurkey with foil, and bake at 400 degrees F for 50 to 60 minutes. Remove foil, baste with the remaining mixture, except for two tablespoons, and return to oven for 60 more minutes, or until the "turkey" is golden. Remove from oven and baste with remaining mix. Tonight's Dinner Grilled kale and pancetta risotto recipe

Pancetta Gives Risotto Awesome Smoky FlavorDifferent kinds of greens are becoming a hot commodity because of their health value. Although several are bitter on their own, including them as an ingredient in the main dish rather than the centerpiece makes for a wonderful, hearty dinner that's rich in flavor.

kale and pancetta risotto

Since 2012 has started, I'm trying to include more leafy greens in my diet. I've always been a fan of the basics like cabbage, lettuce and broccoli. But I've started buying more and more fresh spinach and kale to eat in salads or add to pastas. Why you ask? Well because they add a new, earthy flavor to my dinners and they have some serious health benefits too.

Did you know that one cup of kale contains only 36 calories, 5 grams of fiber and 15 percent of the daily requirement for calcium and vitamin B6, 180 percent of vitamin A, 200 percent of vitamin C and 1,020 percent of vitamin K? This leafy vegetable is also very good for the eyes (if you'd like to try something besides carrots), it lowers cholesterol and helps reduce the risk of heart disease, especially when cooked. So you can see why I've started adding kale to my weekly grocery list.

Since I'm trying to include kale more in my meals, I've started to watch for more recipes that use it. This risotto recipe from Sunset Magazine is just one perfect example.

Grilled kale and pancetta risotto recipe

Serves 4

Ingredients:3 tablespoons olive oil, divided4 garlic cloves, mincedSalt and pepper to taste2 cups kale, stems removed4 ounces pancetta, diced2 cups Arborio rice1 shallot, chopped1 cup dry white wine, like chardonnay4 cups chicken broth2 tablespoons butter1 cup heirloom cherry tomatoes1/2 cup Parmesan cheeseDirections:
Pour one tablespoon olive oil in a large bowl. Add the garlic and kale and toss to coat. Heat a grill pan over medium-high heat and cook kale for about four minutes. Transfer kale to a plate, slice up and set aside.Brown pancetta in a large sauté pan over medium-high heat. Transfer pancetta to paper towels and set aside.Add the remaining olive oil to the same pan you used for the pancetta. Add the rice, shallot and garlic and cook until rice starts to toast and shallots start to soften, about two minutes. Reduce heat to medium and pour in the wine, stirring constantly until absorbed. Add one cup of broth and continue stirring until absorbed. Continue adding the broth one cup at a time and stirring until absorbed and rice is tender, about 20 minutes.Remove risotto from heat and fold in pancetta, butter, tomatoes, kale and cheese. Spoon into a serving dish and serve immediately.

Frozen snacks you can feel good about

Healthy,
Tasty TreatsWalking down the frozen foods aisle at the grocery store isn’t always encouraging: Easy options abound, but many aren’t very healthy. Here are our top six picks in frozen snacks you can feel good about giving your family.

Mom and kids with pospicles

1Frozen fruit pops

Sometimes, all you want is a cold and fruity frozen pop to cool you down on a hot summer day. While many of the frozen treats available at the grocery store are laden with saturated fat and added sugar, healthier options exist, such as Edy's Fruit Bars and Whole Fruit's Fruit Bars.

You also can make your own pops at home by filling pop molds with 100 percent juice or a blend of real fruit and yogurt. Freeze, and within a few hours you'll have delicious and healthy frozen treats.

2Healthy burritos

There is absolutely nothing unhealthy about whole-wheat tortillas, black beans, brown rice and a little cheddar cheese. While these ingredients may not sound like those in your average frozen burrito, you may be surprised to find that many individually wrapped varieties in the freezer section are actually made with healthy, organic ingredients. Look for options with fewer than 300 calories.

3Frozen grapes

Simply purchase seedless red grapes, wash them, pull them off the stem and place them in a bowl in the freezer. These sweet nibbles are a delicious snack that will keep your whole family satisfied.

4Microwaveable sandwiches

You've probably seen those microwavable paninis, gyros and other simple sandwiches. If you haven't tried them yet, give them a shot. Most offer high-quality proteins that will keep you full until dinnertime. Pair them with cut vegetables or a piece of fresh fruit.

5Whole-grain frozen waffles

Making waffles from scratch takes a while, but why spend the time to mix, cook and serve when all you have to do is pop frozen waffles into your toaster? You can use a frozen waffle as the bread for a peanut butter and banana sandwich, or top one with vanilla yogurt and fresh berries for a tasty late-evening treat.

6Baked sweet potato fries

Everyone enjoys the taste of a good French fry, but there's not much to like about the saturated fat and simple carbs you consume when picking up a sleeve from a fast-food joint. Instead, look for bake-able sweet potato fries in the frozen food section at your grocery store. Sweet and salty sweet potato fries are packed with nutrients and fiber.

Top 10 weirdest pie flavors names

Would you serve a funeral pie?
Funeral pieWeIrd pie

Nothing quite hits the spot like a giant slice of apple, pumpkin or cherry pie. As good as these pies are, why not add some variety to your boring dessert spread with, say, a pie made with beef fat, bacon or potatoes? Or maybe a shoofly or funeral pie is more to your taste?

Even though a pie made with beans or bacon makes us a little uneasy, we're not ones to judge something before we taste it. However, we are drawing the line at the "funeral" pie. We don't care how good it tastes.

1Purple passion grape

You've heard of cherry, apple and strawberry pies, but what about grape? Many wine enthusiasts (and makers) use their pitted leftover wine grapes in pies instead of throwing them out! Wine grapes are typically much sweeter than regular grapes so they make a great fruit for a dessert pie.

2Bean

Nothing like ending your day with a slab of bean pie, right? As unappetizing as this sounds, bean pies are actually quite sweet when made right. Many bakers use navy beans and pair them with evaporated milk, sugar, butter and spices like cinnamon so the end result is sweet, spicy and very hearty. If you want to attempt this, just be sure to puree the beans so you aren't left with chunks (for obvious reasons).

Apple bacon3

Apple bacon

This apple bacon pie was a favorite here at SheKnows during the summer, and it's not hard to see why. Bacon is good with anything, even apples! The use of bacon in place of the top crust of the pie gives each bite the perfect balance of salt and sweet. Plus, adding bacon is a surefire way to get your husband or boyfriend to eat your dessert, even if they hate pie!

Sweet potato4

Sweet potato

Sweet potato pie is a Southern favorite and, surprisingly, doesn't taste as weird as it sounds. By pairing the potatoes with butter, brown sugar, pecans, sweet milk and whipped cream, the end result is a sweet, creamy mousse that tastes a little like pumpkin. As good as it tastes, don't expect your kids to jump in excitement when you say "potato" and "pie" in the same sentence.

Shoofly5

Shoofly

Nothing makes a pie sound more delicious than putting the word "fly" in the title. The name for this pie actually comes from the Amish. Apparently the pie is so sweet, when it cools it attracts flies so the bakers had to "shoo" them away. The pie itself is more of a sweet coffeecake made with a molasses crust and topped with whipped cream.

Finger6

Finger

Before you scream, this pie is luckily not made with real fingers. In fact, it gets its very strange (and rather gruesome) name from the preparation of the pie. Bakers in the old days would stir this pie (also titled sugar cream) with their fingers to keep the crust from breaking during baking. Nowadays you can use a whisk or fork to stir (to avoid having your finger end up in the pie).

Mincemeat7

Mincemeat

Mincemeat pie has been around for ages (since the 13th century to be exact) and is an extremely popular dish during the holidays in the UK. It is typically made with a selection of fruits (like apples, raisins and cherries), sugar, sweets and beef suet, which is raw beef fat. As popular as these are, we think we'll leave the fatty meat pies for Sweeney Todd.

Grasshopper8

Grasshopper

Made from minty cream, green food coloring, dark chocolate cookies and sugar, this is one of the most universally loved pies out there, especially during the holidays. The reason for the strange name is rather simple, it was called grasshopper pie because its bright green color resembled the skin of the insect. There is also an earlier version of the pie from the Philippines that used real grasshoppers in the filling. To keep us from gagging, we're trying to forget that last one.

9Sweet green tomato

If there is one place green tomatoes do not belong, it's in a pie. However, leave it to the queen of deep-fried cooking, Paula Deen, to make a pie out of Crisco and green tomatoes. She paired the tart tomatoes with raisins and sugar to sweeten them up and baked them into a flaky pie crust. We don't know about you, but we'll keep our tomatoes in our salsas.

10Funeral

And the winner for the weirdest (and worst) name ever for a dessert goes to funeral pie. This pie (more appropriately named raisin pie) is commonly served at Amish funerals, hence the morbid and depressing nickname. Unless your family has a sick sense of humor, we'd suggest sticking to "raisin" pie when putting this one on your menu.

Chia Health benefits and recipes

Why You Should Be Eating ChiaAs a kid, I grew up raising chia pets and munching on the sprouts, more for the fun of it than understanding that chia is a super food. Now that I'm all grown up, those nutrient-dense chia seeds are a staple in my kitchen. Here's why you should be eating chia and a few chia recipes to put on your family's weekly menu.

Chia seed background

What exactly is chia?

Chia seeds are an unprocessed whole food that dates back to the Mayan and Aztec cultures, who lauded the tiny seeds as a strength and energy booster. Chia seeds are small like flax seeds, but unlike flax seeds, chia seeds don't have to be ground for your body to absorb their nutrients.

Chia nutrition

Chia seeds are a concentrated food source of omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants and calcium. One tablespoon contains about 60 calories, 6 grams of fiber, 3 grams of protein and a healthy dose of antioxidants, omega-3s, calcium, iron, phosphorous, magnesium and zinc.

According to HealthWarrior.com (my go-to choice for chia), a 16 ounce pouch of chia contains the equivalent of:

Fiber of 4 pounds of oatmealProtein in 3 pounds of tofuAntioxidants of 2 pounds of blueberriesOmega-3s for 10 pounds of salmonCalcium in 4 pounds of 1 percent milkMagnesium of 15 pounds of broccoli

That's one power-packed pouch of whole food goodness.

Health benefits of chia

Though clinical studies are few, chia advocates recommend adding chia to your diet because it is dense in nutrients, can increase energy and mental focus, keep you feeling full longer and help you maintain a healthy weight. Chia is a low-glycemic food and high in fiber, both of which can help stabilize your blood sugar levels and prevent overeating. Chia isn't a miracle food, but it can certainly boost the nutrition of your meals.

Cooking with chia

Chia seeds have a mild, nutty flavor, which makes them perfect for sprinkling on cereal, whole grain dishes, pasta, vegetables and fruit as well as to mix into yogurt, sauces, baked goods and drinks. When you mix chia with water, it forms a gel, which can be a thickener or binder in foods and even sipped as a filling, healthy drink.

In a pickle What to do if you lose power in the kitchen

Tomato soupMake meals
during the outage

When storm hits, with widespread power outages, lots of families have to cope without electricity in the kitchen. This can make feeding your family a challenge to say the least. But it's not impossible.

Losing power in the kitchen can put you in a major pickle. But a little resourcefulness — plus a well-stocked pantry — will have your family fed in no time. As long as it's safe and there are no evacuation instructions (tune into a battery-operated radio for details), you'll be good to go.

Find out how to evaluate food safety after a power outage >>Fridge

Obviously no power means your fridge is shut off. If it seems like the power outage is a fluke and electricity should be restored soon, then resist the temptation to grab that cold beverage. Keeping the fridge closed will help prevent the cold air from rushing out and will make sure your food stays fresh, even for 24 hours. If there's a major outage in your area due to a storm or other major event, then you might want to crack open that ice cream and use up those perishables.

Gas or electric

You may even be able to cook, depending on your stove. If your kitchen is fully electric then you're out of luck, but if you have a gas oven and/or stove that can be used without electricity, then you're in business. Light some candles or set up some lanterns or flashlights and cook up a power outage feast for your family. Remember, you have to use up that food in your fridge anyway, so you might even be able to invite the neighbors over!

grillBarbecue

If your stove is out of the question, can you get a grill up and running? Of course if there's a hurricane then don't risk it, but if your power is out for another reason and you have access to a grill, then there's no better time for a cookout.

Pantry

A well-stocked pantry can be a lifesaver in a power outage. If you can cook then things are even better, but even without a stove or grill, a pantry is full of meals waiting to be made. Canned peanut butter, beans, tuna fish, vegetables and fruit can all be turned into food for the family.

8 Tips to get tidy

Make A
Clean SweepHave you watched the new reality TV series Hoarders and feel a twinge of guilt over your own overflowing laundry basket and untidy behavior? This eye-opening series showcases homes one step away from being declared a biohazard while their compulsive residents require therapy and a team of professionals to sort, clean and fight the disorder. Even if you aren’t a candidate for the show, spring is shedding light on the messes you’ve been ignoring all winter and beckoning you to get cleaning. Before you crawl back onto the couch feeling overwhelmed, we’re sharing our top tips for getting – and staying – tidy.Woman organizing closetDisorganization is a common problem

While Hoarders represents worst-case scenarios, an overwhelming 80 percent of Canadians feel disorganized, with most saying they have a hard time keeping order in their home, at their workplace, and with time management, says a December 2009 Leger Marketing survey conducted by Professional Organizers in Canada (POC).

Thirty-four percent of Canadians polled said they lacked the necessary skills to effectively manage their time, and that their personal and work schedule was the most disorganized area of their lives. Twenty-nine percent of Canadians said their home is the most disorganized part of their lives with 34 percent of women reporting that their home was disordered.

Disorganization creates stress and anger

Even more concerning than the large number of disorganized Canadians, is how being disorganized affects their mental health. Ninety percent of disorganized Canadians reported that being disorganized negatively impacted their lives. Forty-three percent said they felt stressed, 39 percent felt frustrated, 14 percent reported being upset, and 11 percent said that their disorganization made them feel like failures. Those who reported the most significant negative impact of disorganization were women, Canadians under the age of 45, working Canadians, and those with children in the household.

Action plan: Tips to get tidy

Frustration alone certainly won't get you organized, but the following home organization tips from the POC will prevent your house from being featured as a hazard area on TV. First off, don't panic and don't let a messy home defeat you mentally before you even begin! Take a deep breath and read on.

1. Make a priority list every day

Set daily priorities so things don't pile up and get out of control. Make sure the most important tasks are at the top of your list so you'll get them done.

2. Know how you like to work

Take advantage of your "power hours" – if you are an early riser, schedule the most important tasks for your most productive time of day. If you work best with a clean desk, spend a few minutes getting your desk cleared before you start work.

3. Put it in your schedule

Determine which rooms or areas you want to organize, and schedule one per week until the list is complete. Start with something easy, like a linen closet, decide how much time you can devote to the project, and put it in your calendar – or you will never get around to it.

4. Consolidate tasks for efficiency

Return calls or respond to emails at one time, pay all your bills, even group your errands together by geographic location. You'll get more done in less time when you don't have to switch from one activity to another.

5. Everyone should pitch in

Make sure that all members of the household know where items are kept, whether it is sporting equipment, photographs, or even incoming mail and newspapers. Create a simple map of such zones, if you like, and make sure that storage areas are kid-friendly so that even the younger members of the household will be able to help return items to the proper home.

6. Put your house on a diet

Most of us have too much stuff that we don't use or need. Go through one room at a time and decide what stays and what goes.

7. Edit your wardrobeDoes everything fit, look good, and make you feel good when you wear it? We wear 20 percent of our clothes 80 percent of the time. Think about that as you weed out the unwearables.8. Recycle!

Feel bad about throwing out that jacket or box of CDs? Donate items to charity, sell them online or swap them for something else on a website like the new Canadian "bartering community" at SwapSity.ca or Freecycle.com in the US. You can also list your items on Craigslist.com for your area.

Ingredients:Molasses cookie mix (or your favorite molasses cookie recipe. You might even try brownies!)Blue, red and white Airheads candies (for the hat and scarf)Wintergreen Lifesavers (for the fur trim on the hat)Tootsie Rolls (for the ears)Black candy beads or black gel icing (for the nose)Royal icing or melted chocolate (to secure the candy pieces in place)Directions:1Make and bake dough

Combine molasses cookie mix according to instructions. Spread dough onto a 9 x 13-inch baking pan lined with parchment paper. Bake for 18-20 minutes at 375 degrees F, until cookie dough is done in the middle but not burnt on the edges. Let it cool for about 5 minutes.

Wiener dog Santa cookies -- bake dough

2Cut out dog shapes

Using a spatula, lift the entire baked cookie out of the pan. (The parchment should have kept it from sticking to the bottom of the pan.) While the cookie is still a little warm, cut out wiener dog shapes. (I was able to get 9, but you could probably get 10 if you tried.) Allow the cookies to cool completely.

Wiener dog Santa cookies -- cut shapes

3Frost the dogs together

Put royal icing or melted chocolate on one wiener dog cookie and stack a second cookie on top. Molasses cookies are naturally a little flexible and chewy, so you can squeeze the tails & noses together into more of a point on both ends. Repeat with remaining cookies. (Note: If you can cut 10 wiener dog shapes out of your cookie sheet, you should be able to make 5 complete Santa dogs.)

Wiener dog Santa cookies -- frost

4Decorate your pup

Add eyes and noses with black candy beads or black gel icing.

To make the ears, soften and sculpt tiny bits of Tootsie Roll into the shape of a long teardrop. Attach to the cookie with royal icing or melted chocolate.

To make the scarves, use a rolling pin to flatten and elongate a blue Airhead candy. When it's about 6-inches long, cut it into 1/2-inch strips with scissors. Cut tiny notches on the ends for fringe. Wrap around the necks of the wiener dogs.

Wiener dog Santa cookies -- decorate

5Make the Santa hats

To make the hats, roll a red Airhead candy into a cone shape and bend the tip over. Add a tiny ball of white Airhead candy. Attach the red candy cone to the Wintergreen Lifesaver. Place the hats on the dog heads or attach them securely with royal icing or melted chocolate.

Quick tip

Airhead candies can soften and lose their shape in warm temperatures. If you plan to make these cookies for a party, refrigerate the hats until you're ready to display.

While part of a parent's job is providing structure, it's also important to teach kids to listen to their body's hunger and satiety signals. Rosanne Rust, M.S., R.D., L.D.N., registered dietitian, online weight loss coach and author, advises parents against mandating eating times by the clock (as in, "lunch is at noon" and "dinner is at five"). The rule even applies to infants (unless they have a medically directed need to eat more frequently). Forget the clean plate club, too. Rust advises to never force or bribe a young child to eat if she claims not to be hungry. (You can require, however, that she sit politely with the family through at least part of the meal.)

2Make food preparation fun.

Rust also advises making a fun game of shopping for foods, inviting kids to pick out their own fresh produce items to try at the store each week. Pick out a recipe together, and let kids help in the easy prep phases such as washing, peeling and measuring. Not only will your kids be more likely to try the new foods they helped prepare, but they'll also gain confidence in learning a new skill, such as cooking.

3Eating is not a hobby.

Studies show that people who eat snacks while watching television programs practice mindless eating. As a result, they consume more unintended calories than those who eat at a table, noticing and enjoying every bite at a slower pace. While the act of family dining and cooking with others is to be enjoyed, make certain that kids understand that eating chips in front of the television is not a form of entertainment.

4Leave the junk at the store.

It sounds simple, but a huge part of eating processed foods comes down to whether or not they're readily available. Just as you come home from work ready to lunge at the first box of cookies you see after a rough day, your kids will do the same. From there, bad habits of eating for comfort start -- and can be a lifetime battle to overcome. Remove the temptation entirely and leave the junk foods on the shelves where they belong.

5Watch what they drink.

Even 100-percent juice is sugar-laden, and real fruits and veggies are always better than the juice form. Limit kids' intake of juice starting at a young age, and make certain that they drink plenty of water and milk in place of sugary liquids.

"A child can take up to 20 exposures before trying a new food -- and don't expect them to like everything!" says Rosanne Rust, M.S., R.D., L.D.N.More eating tips for healthy kids
